Logistics
- Have everyone eat in the same room if possible
- Soft music is nice
- Karaoke is fun
- Remove dining room table for better movement
- Encourage people to come through front door
- Give 45 minutes for drinks and appetizers

Roast
- Buy boneless next time, age at least 3 days
- Cooking time approximately 6 hours
- 1 whole rib eye will feed 25 people
Sides
- A 1/2 pound vegetables per person _total_ is enough
- Mashed potatoes
- Keep warm in crockpot
- Brussel Sprouts
- Cutting in half is nice but not necessary
- coat with EVOO, balsamic vinegar, and kosher salt
- broil for 25 minutes
- reserve balsamic/oil to dress
- Mac & Cheese is great with cream instead of milk
- Skip the mushroom gravy
- Horseradish sauce: 2 parts sour cream, 1 part horseradish, salt to taste
Drinks
- Water pitcher
- Sweet Tea-1 gallon ready (cold) with concentrate for back up
- Pitcher of a special cocktail TBD
- Beer (6 pack at most not usually consumed)
- Sodas- cokes, ginger ale
- Wine
- Red Merlot (Woodbridge) - Mondavi wine
- White- Chardonnay
- Ice
- 20# for beer 7 sodas
- 20# for drinks

- Dip:sour cream, black pepper, garlic salt, dried chives
